While there are plenty of good piano-based songs, there are a lot less bands that predominantly use piano, and as you say use it well.
One of my favourite artists is Nick Cave, and, being a piano playing singer songwriter, most of the bad seeds songs use piano.

Something Corporate are the top piano rock band about at the moment.
The ball is round and has many surprises.
Surprised no-one has mentioned 'Mylo - Destroy rock n' roll'. Mild dance music (i.e. won't give you a nose bleed) with some great tunes in there.
Just got 'Thunder Lightning Strike' by 'The Go! Team' . An absolutely superb album. Infectiously lively and uplifting music from start to finish - sounds like the soundtrack to a cartoon super-hero film (imagine an album full of tunes in the vain of 'Self Preservation Society' from The Italian Job). Mild dance with a complete mix of loads of different influences - would inject energy into someone in a coma.
A bit wacky, but get it - you won't be disappointed....

for something further afield, the band Sightings have this amazing record 'arrived in gold' - what a clatter, the songs sound half-formed and bizarre, imagine a demonically possessed fridge trying to play a guitar
for something sunnier and unrelentingly groovy, it is difficult at present to top M.I.A.'s 'arular' - great london/sri lankan lass incorporates grime, bhangra, and lotsa vocal undulations for the sexiest political record ever
