Homer at the Bat, Season 3 Episode 17
Mr. Burns bets $1,000,000 that his company team can beat a competing plant's team. In order to do so, he replaced the regular company team with new security guard Roger Clemens, new janitor Wade Boggs, lunchroom cashier Ken Griffey Jr., and other new employees like Steve Sax, Don Mattingly, Ozzie Smith, Darryl Strawberry, Jose Canseco, and Mike Scoscia (who runs the solid contaminate encapsulator).
Marge vs The Monorail, Season 4 Episode 12
After getting $3 million from a fine due to Mr. Burn's illegal disposal of nuclear waste, the town decides to spend money on a needless monorail ....built from shoddy materials. Leonard Nimoy guest voices as himself.
Whacking Day, Season 4 Episode 20
While the town of Springfield prepares for the annual snake whacking day (which Lisa dreads), Bart gets expelled from school for embarrassing Mr. Skinner during a school inspection. Barry White guests
Cape Feare, Season 5 Episode 2
Sideshow Bob is paroled from prison, and he has only one thing in mind for Bart: revenge.
Lisa On Ice, Season 6 Episode 8

Radioactive Man, Season 7 Episode 2

A Fish Called Selma, Season 7 Episode 19

Couldn't really pin one down but off the top of my head: the one which ripped off Rear Window or the one where Sideshow Bob becomes mayor.

Tend to think more in terms of favourite scenes rather than episodes, as most every episode has something brilliant in it. If pushed the Frank Grimes one is one of my faves though, and the Hank Scorpio one.
Favourite scenes include Homer trying to intercept his abusive letter to Mr Burns:
"Hello, my name is Mr. Burns. I believe you have a letter for me."
"Okay Mr. Burns, what's your first name."
"...I don't know."
Homer falling into Springfield Gorge twice on the skateboard and then the ambulance trolley, the bit where the ambulance drives a foot and hits the tree genuinely nearly killed me the first time I saw it.
Moe undergoing the polygraph test:
"I don't deserve this kind of shabby treatment!"

The Stonecutters episode and the one where Homer goes to work for Hank Scorpio are my old favourites, but I saw the dental plan episode again recently, and it's a gem.
