Off the week after next. Can't afford accomodation/flights to the major Western European cities and preferrably would like to avoid a drunken sloppy resort full of Ireland and Englands worst.

If you want a city break maybe Valencia or Seville, havent been there myself but have heard good things about both places. Or maybe somewhere like riga, taalin or vilnius while it may be a bit pricey for the flight the accommodation and spends wont be too bad.
For a week away in the sun what about Dubrovnik or Stalis in Crete. Stalis is quite a small resort so doesnt tend to suffer from the lager louts that you would get in places like Gran Canaria
if you're in Cork, there's a direct flight to Carcassonne which looks fantastic, lovely little town and wonderful sights. We looked up hotels too and there's a demense/mansion style hotel in the country outside Carcassonne which again is something from a 50s romance movie, the works.
I went to Carcassonne last year (just before the Rugby World Cup) and had a great time. I actually stayed inside the city walls in a lovely B&B. Very surreal place - they actually filmed the castle scenes from Robin Hood Prince of Thieves inside the walls so you can be Kevin Costner for the weekend!

It might be a bit short notice to get a room here but you never know. Carcassonne is ok for 3 days maximum so if you went for a week I'd recommend checking out somewhere else in the south like Toulouse or Bordeaux.
